Cauliflower Couscous

Cauliflower Couscous

Ingredients

  • 1 cauliflower cut into large chunks
  • 1 clove of garlic minced
  • 1 clove of ginger minced
  • 0.5 tsp cumin seeds
  • 1 tbsp olive oil
  • 30g raisins soaked to soften
  • 5 dried apricots soaked to soften
  • 20g coriander leaf chopped
  • Salt and lemon juice
  • Pomegranate seeds

Preparation

  1. Pulse the cauliflower in a food processor to make couscous sized grains.
  2. In a large pan or wok heat the oil. Toast the garlic, ginger and cumin until fragrant.
  3. Add the cauliflower couscous, stir fry at a high heat for one minute.
  4. Remove from the heat, add raisins and apricots. Season with salt and lemon juice.
  5. When cooled add coriander leaf, mix then garnish with pomegranate seeds.

Broccoli, Pumpkin and Wholegrain Bake

Broccoli, pumpkin and wholegrain bake

Ingredients

  • 350 g of a chosen whole grains (rice, spelt or barley)
  • 3 tsp of extra virgin olive oil
  • salt
  • 300 g of broccoli
  • 5-6 basil leaves
  • 2 spoons of Parmesan
  • 200 g of pumpkin

Preparation

  1. Boil your chosen whole grain in salted water (or as per packet instructions).
  2. Once the whole grain is cooked, sieve the water and pour the whole grain into a bowl and leave aside.
  3. Wash the broccoli and pumpkin and then cut into small pieces. Steam both vegetables.
  4. Blend steamed broccoli with some water, a drizzle of oil, parmesan and basil to a creamy consistency. Then mix with the cooked wholegrain and finally add the pumpkin pieces.
  5. Pour mix into a glass roaster and cook in a preheated oven at 180°C for 15 minutes.
